Horseradish

This one's for Dutch and Joan Johnson. When we were home in 2010, they gave us some horseradish root. Somehow it made its way into our luggage.

Tracy planted and nurtured the roots with great care. Four months later we found ourselves in the States again to help out his family. While we were gone, the uncared-for plants died. Disappointment.

Several months ago we were visiting a friend who has a farm south of Lusaka. Guess what she had? Yep, horseradish! Again he planted horseradish and this time it has flourished and come to fruition.

With a grater and vinegar Tracy poured the shredded root into jars that formerly held the burn-your-nostrils condiment. Making a sandwich with horseradish, he declared it good!
