My students at the seminary are not just students to me~they are brothers and a sister in the Lord. Before the close of the term I wanted to invite my students for breakfast. Some of them have been in our home, but we've never had them at our table for a meal. Relationship is everything here in Zambia.
Zambians usually eat porridge or bread and tea for their morning meal. Tracy and I wanted to share some of our favorite American foods, without upsetting their usual routine. So, on the menu for the morning were scrambled eggs, hash browns, porridge, toast, and
coffee. The porridge was similiar to our grits, with some peanut butter mixed into the pot. I wish I could say the hash browns turned out well~I cooked them in the wok I have and the coating did something to the flavor. Tasted burned. Bad wok. Bad wok!
It was a great time of fellowship with Christine, Sandford, Darlington, Feston, and Goden (left to right). The remainder of the class will be coming this next Saturday for breakfast and we'll be ready for them!
