The wonderful thing about Zambian winters is that one can still grow a garden without a greenhouse. Right now we have pumpkin, strawberries, tomatoes, lettuce, corn, and potatoes sleeping in garden beds. Tracy recently harvested this plentiful crop of beets. The wheelbarrow-full produced almost three quarts of Harvard Beets, my job. Does anyone know why they're called that?
At the time of harvest we didn't know just how good the beet greens were until we'd given most of them away to our Zambian friends. But, sauteed with a little garlic, onion, and tomato, they are mmmm-good!
Growing a garden is something Tracy's always loved to do and we've had gardens from time to time in Oklahoma and Illinois. But I think he enjoys his Zambian garden the best, reaping a harvest of pleasure from it.
