Meet Joy and Mala

God continues to develop our relationship with Joy and Mala Joyappa, neighbors here in Makeni. 
The thing I love about Zambia is the blend of cultures~Indian, Lebanese, Chinese, Australian, and European. 
Mala has taught me how to make potato curry and chipatis; I've taught her how to make tofu "meatloaf."

Saturday the Joyappas, who are vegetarians, invited us to their house for authentic Indian food. We feasted on palau, dosas, and several other dishes that I cannot remember. Dessert was ice cream with fruit cocktail. It was all delicious and Mala thankfully kept the "temperature" turned down a bit as Indian food can be pretty spicy. 

Please pray as our relationship continues with the Joyappas. I believe God has brought us together for a reason and it is our hope that over Christmas we may spend more time with them. Also please pray for their paperwork as they seek to get their work permits as regulations for immigrants have changed considerably since Zambia elected a new president. The Joyappas have been in Africa for 25 years, but have found these recent changes challenging.
