. . . that eggs do not have to be refrigerated? On our first visit to Zambia I saw vendors by the side of the road selling trays of eggs like the ones at the left. My first thought was, "That can't be good." I've since found this to be a common practice, even in convenience stores. As long as the eggs have never been refrigerated, they do not need to be kept cold. Apparently when the eggs are cooled, the inside skin next to the shell pulls away, creating a space for bacteria to grow. Once refrigerated they must remain cold. This helps me understand why there's no urgency to go out and gather eggs from under hens on the farm. In fact, I've become truly Zambian and have a tray of eggs sitting on TOP of my refrigerator! And, we're still alive!
